Happy huMp day! I am so glad there is only 2 more days of the work week. I'm pooped! ha.
I just wanted to share a few things tonight.
First, have you seen the show, "Out of the Wild" on Discovery channel?! It's definitely one of my fave shows on right now! Gross at times, but totally cool & I would totally do it (even if I would probably last all of a day or two! ha)
Second, Day #4 has gone fantabulous! Praise the Lord! :) Mom & Phil had church tonight, so we couldn't walk together, so I walked using the Wii. My has it been a while! I also walked last night & was pretty of myself for conquering this massive hill!
Favorite snacks this week: 1 c. of watermelon (1 pt.) & 1 oz. chunks of mozzarella cheese (2 pts.) yum!
I'm really trying to vary my foods this time around, hopefully I won't get "bored" as quick not being able to have all that "good" crappy food I'm used to!
By doing that, I am really trying to be more resourceful with meals & planning.
Last night, I made a personal pizza for myself for 7 pts. SUPER good & the amazing thing was I was actually FULL!
Tonight, I made this-
Chicken Noodle Casserole. SO good! The prep was a bit for me, but I think it's just because I had just walked in the door from work & was hot! haha. BUT, I pushed through & am so happy I did because it was filling AND yummy!
Here is the recipe in case you would like to give it a try for your family!
5 c. uncooked egg noodles
1 c. frozen peas
1 celery rib, chopped (i didn't use this)
1 medium carrot, chopped
4 c. cubed cooked chicken breast
1 can (14-3/4 oz.) cream-style corn
1 can (10-3/4 oz.) reduced fat-reduced sodium condensed cream of chicken soup, undiluted
2 c. (8 oz.) shredded reduced fat Colby-Monterey Jack cheese (I used cheddar)
1 small onion, chopped
1/4 c. chopped green pepper (I left this out)
1/4 c. chopped sweet red pepper (I left this out as well)
1/4 tsp. pepper
In a large saucepan, cook noodles, adding the peas, celery & carrot during the last 5 minutes of cooking. Drain.
Stir in the chicken, corn, soup, ONE cup of cheese, onion, green & red peppers & pepper. Transfer to a 9x13 baking dish coated with cooking spray.
Cover & bake @ 350* for 30 minutes. Sprinkle with remaining cheese, bake 10 more minutes or until cheese is melted.

Hope your week is going good. I'm just trying to get through this week. I miss so much. Seeing each other all of 10 minutes a day is just stinky right now, but we are SO grateful for the work!
