What a beautiful few days it's been here in Ohio! The weather has definitely helped motivate me in my weight loss journey & I thank the Lord for that!
I have walked every day in the past 7 days & I seriously think that's a record for me!
I took Megan shopping for her birthday yesterday (she'll be 20 tomorrow! ack. I feel old! ;)) & we had a really good time! We had a good dinner at Cheeseburger in Paradise ( & while I had planned for this meal, I opted for the grilled chicken breast sandwich on a whole wheat bun, with rice instead of fries! It was deeelicious!). For dessert we got this scrumptious delight:
After dinner, we ventured to the mall for some fun shopping. And I have to admit, I cringe going into the "trendy" stores, such as Aeropostale, American Eagle & Victoria's Secret. Not because I don't like them, but because I know people are thinking the same thing I am, "what am I doing in here?!" Now, Megan can wear the clothes, so that's why we were there, but I cannot wait until I can go in & comfortably shop & WEAR that stuff! It's a bummer I used to be able to do that a few years ago...BUT, the awesome thing is I WILL BE BACK NEXT SUMMER!!! ;)
Anywhoo...after the mall, a trip to Old Navy was in order, where we scooped up a few good things before heading home. Megan & I had a good talk about some of the decisions she has been making & about the Lord. I appreciate those times with her.
After we got back, Megan headed home & the weather was so beautiful, I was so motivated to walk! SO, I called my step dad since my mom was at work & invited him into town to walk with me & he did! He's awesome! :)
We did our 2 mile walk, he went home, but I STILL had all this energy, so I hopped on the wii fit & walked another 40 minutes!! I felt so good afterwards! It's amazing how awesome you can feel just getting off your butt & MOVING! I am so thankful that I just KNOW this time is THE time when I will have success!
So, today is weigh in day & I am happy to say I was down another 4.6!!! For a total of 12.4!! (turns our last week I miscalculated my weight-in a good way- & was actually down 7.8, not 7.6!).
We have been wanting to grill some ribs for a while now, so since the weather is gorgeous out today, we decided to have them! I was a bit nervous about maybe going overboard with them, but I just had Nate cut 3 of the littlest ones off for me & they were sooo good! My hubs can grill, ya'll! ;) And after the 3 I was full! SO good!
I also wanted to share a recipe I found & tried today for Strawberry Muffins.
Now, these are a little "high" in points, but are a perfect treat or snack every so often.
Melt-in -your-mouth Strawberry Muffins from Stoneyfield Farm Yogurt
1 c. all purpose flour
1. whole wheat flour
1/2 c. sugar
1 1/2 tsp. baking soda
2 eggs
1 c. plain lowfat yogurt from Stoneyfield Farm
1/4 c. butter, melted
1 tsp. vanilla
1 c. chopped strawberries, fresh or frozen
Preheat oven to 375*. In a bowl, mix together flour, sugar, & baking soda. In a separate bowl, mix eggs, yogurt, vanilla & butter. Toss the strawberries into the flour. Then, pour the yogurt mixture into the flour mixture & stir. Spoon the batter into the muffin tin. Bake 20-25 minutes, or until the tops are golden brown. Test the center with a toothpick.

I also want to make note that the recipe yields 12 muffins, but I put them in our jumbo muffin tin & made 6 (that's why they look SO big! haha) , so the pts, of course would be a bit more, but I just split one with Nate & was satisfied! :) If you try them, be sure to let me know how you like them!
